McDonald's has made changes to its french fry recipe several times over the years. In 1990 they switched from using beef tallow to vegetable oil for frying. In 2002, McDonald's announced that it would switch to using a different type of oil, one that was lower in trans fats, for frying its french fries. In 2018, McDonald's announced that it would be switching to a new type of oil for frying its french fries and chicken, which is a blend of sunflower, canola and soy oil, which contains no artificial preservatives or flavors. The oil is also free from artificial colors, partially hydrogenated oil and gluten.
These changes were made in response to the growing concern over the health effects of trans fats and the desire to offer healthier options on the menu. However, McDonald's still uses their "secret recipe" of natural beef flavor, but now it's derived from potatoes, rather than animal fat, to season the fries.
